Baked Potato Soup Minced Shitake Mushroom –

Minced shitake Mushroom

20 oz or 600 gms

Bay Leaf

Veg Soup Base ( 1tr water = 1oz soup base)

6 oz or 210 gms

Water Mixed with Veg Soup Base

METHOD :-
- Sautee
the Mire Poix in Butter. No Colour just sweat the Vegetables. Add minced shitake
mushroom and sautee ensure no lumps.
- Add
Grated Baked Potato . Sautee everything together.
Add the
6 lts of water pre mixed with Veg Soup Base.Add
Bouquet Garni ( Bay Leaf, Cloves and Peppercorn).
- Add
seasoning . Cover and Simmer . Add cream to finish 1 oz per order.
- Bouquet
Garni Out. ( Bay Leaf, Cloves and Peppercorn) Serve Hot Garnished with
Chopped Parsley.
- To
serve – Reheat soup in a sauce pan till the internal temp is 160
Fahrenheit.
